Signature Base Malts

Pennypack Pils: 1.8 SRM
Our traditional 2-Row pilsner malt is lightly kilned to produce beautiful flavors of dry crackled hay that evoke the PA fields from which it came. It is a versatile base malt that allows you to showcase any profile.

Rustic Ale: 3.5 SRM
Rustic Ale malt, made from PA 2-Row barley, is our version of an English-style malt that improves flavor and body in finished products. The cereal, slightly nutty flavors are complex and aromatic.
Alternate Grain Malts

Legacy Wheat: 2.5 SRM
Pale wheat malt made from Pennsylvania hard red winter wheat is a light, smooth malt. Contributes slightly sweet, cereal flavor, mouthfeel and head retention.

Heritage Rye: 5.0 SRM
Pale rye malt made from Pennsylvania winter rye adds depth and a distinctive spiciness to any grain bill.

Pale Oat: 3.0 SRM
A rich adjunct due to its high lipid content, this beautiful Pennsylvania-grown pale malt contributes mouthfeel and haze to any beer.

Heirloom Corn: 2.0 SRM
Pale malt made from Pennsylvania-grown heirloom corn is the perfect adjunct for craft pre-prohibition beers. Contact for current variety.

Pale Spelt: 3.0 SRM
Malted from organically grown Pennsylvania husked spelt.
Kilned Malts

Vienna: 6.0 SRM
This sweet PA-grown malt has flavors of lightly toasted bread and works well as a base malt or as a recipe addition to provide a rich aromatic malt profile.

Munich: 10 SRM
Our traditional Pennsylvania-grown Munich delivers an amber color and flavors of chewy bread, light toast, and crackers. Adds a deep, slightly sweet malt character to any beer.

Aromunich: 40 & 65 SRM
A unique aromatic, melanoidin malt that adds light sweetness, deep cracker flavors and amber color without harsh roast taste. Available in two colors.

Dextrin: 1.7 & 3.0 SRM
Our light dextrin malt, made from barley grown on Pennsylvania family farms, improves body, mouthfeel and head retention. Available in two colors
Caramel Malts

Caramel 7: 7.0 SRM
The lightest caramel we currently offer.

Caramel 24: 24 SRM
A medium color kilned caramel that adds residual sweetness and melanoidins. CURRENTLY OUT OF STOCK.

Caramel 90: 90 SRM
Our medium-dark crystal malt contributes notes of toffee and toasted sugar.
Roasted Malts
All made to order; allow 2-3 weeks’ lead time

Lt-Med Toast: 25-150 SRM
Light- to medium-toasted malts from any PA-grown base grain are made to your color specifications. They contribute unique flavors — depending on grain variety and color — ranging from biscuit to cocoa.

Cocoa: 225 SRM
Our signature Cocoa malt is roasted a bit lighter than commercial examples, contributing smooth chocolate flavors without bitterness or astringency. Available from PA-grown barley, wheat or rye.

Cocoa Dark: 350 SRM
Traditional dark roasted chocolate malt contributes rich, roasty, chocolate flavor. Perfect for stouts or other dark beer styles. Available from PA-grown barley, wheat or rye.

Black Magic: 550 SRM
Black roasted malt made from Pennsylvania hard red winter wheat. Adds significant color with less roastiness than husked grains which retain astringency.

Roast Barley: 500 SRM
Dark roasted unmalted barley contributes roastiness and tan foam color to stouts.
Contract Malting
Double Eagle appreciates the relationships we have built with farm breweries and distilleries. This is about as close as you can get to “ground to glass.” We would be proud to work with other farm breweries and distilleries as the opportunities arise, including the opportunity for malting other non-traditional grains such as spelt and oats.
